There is something that draws me to a nice, warm panini.Maybe it's the crispiness or the bread, or the warmth of the filling. I'm not really sure, but back at home, I always make paninis on a weekly basis. One reason why I love making Paninis is that they are so versatile. You can be very creative and add anything you want. One of my new favorite Panini combos is a fig jam, fig goat cheese and caramelized onions, and caramelized onion cheese panini. This combination is both sweet and feels elevated at the same time. It’s the kind of sandwich that turns a simple dinner into a moment—sweet figs, deeply caramelized onions, and cheese, and creamy fig goat cheese pressed between golden, crispy bread. Every bite has a perfect balance of savory and sweet. This sandwich is semi-sweet and creamy but also very crispy, which I really enjoy. The main thing that elevated the flavor for me was the caramelized onion cheese that was from Publix. The flavor of the cheese was intense, with a mild, sweet flavor of caramelized onion. Another ingredient that elevates the flavor of this panini is the fig goat cheese. Personally, I don’t really like Goat cheese and was biased to add it to this recipe, but the flavor didn’t disappoint.

When preparing this recipe, I chose to use ciabatta bread, which brought an extra crunch to the sandwich. Ciabatta bread is nice and thick and very soft. Another option of bread I suggest using would be a good sourdough. Sourdough would add some sourness to the panini and would taste really good since there are a lot of sweet components to this dish. When making the caramelized onions, it is very important to cook them slowly and on low heat. When I cook the onions, I add a little bit of brown sugar at the end.
